蛋黄：多呈卵形、不规则球形、四面体或三角形，表面黄红色或棕黄色，细腻而稍有光泽，有的外部挂有一层黑色而有光亮的薄膜，习称"乌金衣"。有的粗糙具疣状突起，体轻质松脆易碎，断面金黄色，有排列整齐的同心层纹。气清香，味先苦而后微甜，入口有清凉感，嚼之不粘牙，其水液可使指甲染黄，习称"挂甲"。
