     Young people can have problems with their minds. Some students become worried because they have to

study very hard. Others have trouble getting on well with people like their parents and classmates.

     Liu Wei, a junior 2 student from Hefei, could not understand his teacher and was doing badly in his lessons.

He became so worried about it that he started to cut his finger with a knife.

     Another student, 14-year-old Yan Fang from Guangzhou, was afraid of exams. She got very worried in one

exam, and when she looked at the exam paper. She couldn't think of anything to write.

     A recent report from Jiefang Daily says about 18% of Shanghai teenagers have mental problems. Their

troubles include being worried and very unhappy and having problems in learning and getting on with people.

Many students who have problems won't go for advice or help. Some think they will look stupid(silly)if they

go to see a doctor. Others don't want to talk about their secret.

     Liang Yuezhu, an expert on teenagers from Beijing Adding Hospital has the following advice for teenagers:

    * Talk to your parents or teachers often.

    * Take part in group activities and play sports.

    * Go to see a doctor if you feel unhappy or unwell.

大蒜脑壳

      (1)小满前后,种在地里的大蒜长出了圆溜溜的脑壳,正是成熟的时候,可以收获了。扯出来的大蒜脑壳剪掉枯黄的茎叶和下面洁白的根须,十个一把用稻草捆紧,就能上市销售了。

      (2)大蒜脑壳有红皮和白皮两种,蒜瓣有大有小。还没晒干的大蒜脑壳买回来后,剥去蒜皮,洗净切碎,撒上盐,上面放点辣子粉、鸡精、花椒粉,再拿沸油一淋,拌匀后就是一碗开胃的蒜泥。

      (3)剥几斤大蒜瓣瓣,在水里过干净后,放少许盐,再用瓶子装好,放入糖、白酒、醋,以淹过大蒜瓣瓣为宜。盖紧盖子后贮藏,等一两个月后再开盖品尝,就没有酒味了,就连盐味也被糖和醋取代,这种糖醋大蒜则是盛夏时节的一道好菜,不仅开胃,而且肠胃不好的人吃了后就不会胃痛和拉肚子了。

     (4)去掉外皮的大蒜脑壳丢进酸水坛子,泡到夏天,捞起来后下馒头下稀饭格外有味,泡好的大蒜脑壳酸酸的、香香的,等馒头和稀饭吃完,酸大蒜脑壳也吃完了。

     (5)大蒜瓣瓣还可以腌进糟辣子里。腌透的大蒜瓣瓣被糟辣子水染得绯红,一捞起来就香味弥漫,放进嘴里咀嚼又嫩又脆,又辣又香。没有食欲的人吃了后就有食欲,不想吃饭的人吃了后就想吃饭,总觉得没有过足瘾。

     (6)夏天没有大蒜苗也不要紧,大蒜瓣瓣切丝与肉丝炒、切片与肉片炒,炒出来的肉丝、肉片同样蒜香四溢。大蒜瓣瓣还是鸡丁和肉丁的配菜,倒进火锅里越煮越香,几乎浸透到主菜的鸡丁和肉丁里,就是离开餐桌,走到户外,也会闻到大蒜的清香。

     (7)吃片片鱼要放大蒜瓣切细粒,吃酸菜鱼要放大蒜瓣瓣,一是可以去掉鱼的腥味,二是可以增加鱼的香味。细细品味,放了大蒜的鱼更鲜、更嫩、更香,香香的鱼汤也会被喝完。

     (8)烧一把嫩辣子,去灰后与大蒜瓣瓣在擂钵里擂成浆,再放入盐、花椒粉、味精,一直擂成辣子蒜浆后,倒在碗里,那就好吃了。这种香是与生俱来的,不需要添加其他的香料。像这种自己加工的酸辣浆,才是地地道道的农家菜。

      (9)过端午时,在粽子煮熟时放二三十个大蒜煮熟,在端午的早晨吃粽子时必须要吃几个大蒜头。只是老年人一直传承下来的饮食风俗,是每个父母不会忘记的事情,他们会督促儿女们吃了后才放下心来。父母说,大蒜是消毒的,吃了后能把积淀在肚子里的细菌杀死。过端午时,父母还要擂一钵雄黄大蒜。那是过端午的晚餐必备的佳肴。父母说雄黄也是杀菌的,吃了后就会把寄生在肚子里的寄生虫排掉,同时还可以防止毒蛇的进攻。没吃完的雄黄大蒜,父母会用瓶子装好,倒进白酒,如果碰到哪个肚子痛或者沾了草毒,就可以用雄黄大蒜进行治疗。

     (10)其实,大蒜脑壳不仅是佐料,也是蔬菜。种大蒜的人多,吃大蒜的人也多,经常吃一点大蒜脑壳做的菜肴,对人体确实有一定的好处。以前吃鱼是不放大蒜的,现在吃鱼放的大蒜很多,像吃鱼一样,大蒜也被进餐的人吃了,这种大蒜脑壳所做的配菜越吃越香了。

     (11)吃了大蒜后,出的气有种较浓的味道,只要嚼点茶叶,再漱一次口,味道就淡了,不易被人闻到。就算被人闻到也是没有关系的,对于大蒜的喜爱是没有人非议的。大家都吃过大蒜,大家都爱吃大蒜,大蒜已经被大家蔬菜化了。
