On the morning of November 18, 1755, an earthquake shock Boston. John Winthrop, a professor at Harvard College, felt the quake and awoke. “I rose”, Winthrop wrote, “and lighted a candle, looked at my watch, and found it to be 15minutes after four.” John Winthrop hurried downstairs to the grandfather clock.It had stopped three minutes before, at 4:12.Except for stopping the clock, the quake had only thrown a key from the mantel(壁炉台)to the floor.

说起这全聚德烤鸭店的烤鸭来,那可是中外闻名。许多人都知道这里的烤鸭特别好吃,可是关于它的来历,恐怕就不是知道得那么清楚了。
当时的北京前门外,有一位专门经营鸡鸭行业的人,名叫杨全仁,他待人和气,又很会做生意,所以买卖很兴旺。因为手里有了一些钱,他就在当时的肉市街上买了一座铺面,准备开烤鸭店。为了烤鸭店的生意兴旺,他特地请人来给取了店名,来人起了个“全聚德”的名字,意思是说,这地方是闹市街头,是个聚合不散,全而不缺的好地方,只要做生意就会兴旺,财源滚滚。这“全聚德”的名字起得好听,也正中主人杨全仁的心意。他就请人把这三个大字写成金字大匾,高高兴兴地悬挂在店门之上,又请了一位清官御膳房里有名的厨师,精心地烤出鸭子。全聚德的烤鸭,作法非常讲究,它是挂炉烤鸭,是凭着炉墙的热力烘烤鸭子,炉里的温度先高后低,烤出的鸭子外皮酥脆,内层丰满,肉又鲜又嫩,肥而不腻。而且炉里烧的不是普通的木柴,而是用枣树、桃树、梨树等果木炭火烤制。这样一来,烤出来的鸭子颜色是枣红的,鲜艳好看,油亮油亮的。外焦里嫩,有一种特殊的果木香味。烤鸭要趁着热吃,把鸭肉削成片,蘸上甜面酱,加上大葱白,卷在特制的荷叶形的小薄饼里,趁着热吃起来,不但鲜美无比,而且营养丰富。后来,全聚德里又有了“全鸭席”,那风味独特的鸭肝、鸭掌、鸭翅,以及那又香又鲜的鸭骨汤,别有一番滋味,叫品尝过的人终身难忘。好多年过去了,全聚德成了北京最负盛名的烤鸭店,凡是来北京的人如果不尝尝北京烤鸭,都会觉得很遗憾。
